Topinamburw\u00fcrfel zugeben und kurz mit anschwitzen. Mit Weisswein abl\u00f6schen und reduzieren\u00a0lassen. Mit Gem\u00fcsefond auff\u00fcllen. Ger\u00f6stete Koriandersamen mit dem M\u00f6rser zersto\u00dfen und zur Suppe geben. Mit Salz und Pfeffer abschmecken. Den Topinambur bei schwacher Hitze weich garen.
