{"id":502,"date":"2016-09-26T15:31:30","date_gmt":"2016-09-26T14:31:30","guid":{"rendered":"http:\/\/blog.simonu.me\/?p=502"},"modified":"2016-09-26T15:31:30","modified_gmt":"2016-09-26T14:31:30","slug":"ceasar-salat","status":"publish","type":"post","link":"https:\/\/blog.simonu.me\/?p=502","title":{"rendered":"Ceasar Salat"},"content":{"rendered":"<p>F\u00fcr 2-3\u00a0Portionen<\/p>\n<ul>\n<li>Ca 150\u00a0gr Sauerteigbrot<\/li>\n<li>2 EL mildes Oliven\u00f6l extra vergine<\/li>\n<li>2 kleinere Lattich<\/li>\n<\/ul>\n<p>F\u00fcr die Sauce:<\/p>\n<ul>\n<li>1 EL Rotweinessig<\/li>\n<li>90\u00a0ml mildes Oliven\u00f6l extra vergine<\/li>\n<li>2-3\u00a0Sardellenfilets, fein gehackt<\/li>\n<li>1 Knoblauchzehen, fein gehackt<\/li>\n<li>1\u00a0Ei<\/li>\n<li>60 g Parmesan frisch gerieben<\/li>\n<li>Salz und schwarzer Pfeffer aus der M\u00fchle<\/li>\n<li>3 EL Zitronensaft<\/li>\n<\/ul>\n<p>Backofen auf 180C aufheizen. Brot in W\u00fcrfel von 2cm Kantenl\u00e4nge schneiden, gleichm\u00e4ssig in Oliven\u00f6l wenden, leicht salzen. Im Ofen in einer Form 8-12 Min r\u00f6sten.<\/p>\n<p>Den Lattich r\u00fcsten, waschen und gut trocken schleudern, allenfalls mit K\u00fcchenpapier trocken tupfen.<br \/>\nEssig, \u00d6l, Sardellen und Knoblauch in einen Mixbecher geben. Eier und Parmesan, viel schwarzen Pfeffer zugeben, und mit dem Mixstab eine Emulsion herstellen, Zitronensaft einr\u00fchren. Die Lattichbl\u00e4tter in eine grosse weite Sch\u00fcssel geben, den Grossteil des Dressing zugeben und mit den H\u00e4nden sorgf\u00e4ltig durchmischen, jedes Blatt soll vollst\u00e4ndig mit der Sauce \u00fcberzogen sein, falls n\u00f6tig den Rest der Sauce zugeben.
